Eggplant Pizza
On Saturday, our friends, Jan and Dan came over. We artfully made pizzas! This one was my absolute favorite. I found the recipe in Martha Stewart Living and altered it a bit. Here it is...you MUST try it!
EGGPLANT, PISTACHIO and POMEGRANATE PIZZA
1 store bought pizza crust
1 sliced eggplant, thinly sliced lengthwise into 6 strips
Extra-Virgin Olive Oil
Sea salt coarse
red-pepper flakes
1/2 c salted pistachios, chopped
1/2 cup crumbled feta
1/2 cup pomegranate seeds
1/4 cup cilantro
1. Brush olive oil on eggplant and bake at 350 for 20 minutes
2. place eggplant on pizza crust and drizzle a little more Olive oil and top with salt and red pepper
3. bake until warm
4. Sprinkle with pistachios, feta, pomegranate seeds and cilantro.
5. cut and serve
